Honey-soy beef skewers with stir-fried Asian greens

Savory grilled beef paired with fresh wok-tossed greens.
Ingredients:
  • 80ml (1/3 cup) Chinese rice wine or dry sherry
  • 42.00 gm salt-reduced soy sauce
  • 28.60 gm honey
  • 500g beef rump steak, excess fat trimmed, cut into 2cm pieces
  • Olive oil spray
  • 1 tsp finely grated fresh ginger
  • 1 bunch choy sum, trimmed, leaves separated, washed, stems cut from leaves
  • 2 bunches baby pak choy, trimmed, leaves separated, washed
  • Steamed white rice, to serve
Instructions:
  • Mix the rice wine or sherry, soy sauce, and honey in a jug. Place the beef in a shallow glass or ceramic dish. Pour three-quarters of the rice wine mixture over the beef and mix well to coat. Cover and refrigerate for 2-3 hours to marinate.
  • Drain the beef and discard the marinade. Thread the beef onto skewers. Preheat a barbecue grill or chargrill on high, then spray the beef with olive oil and grill for 2-3 minutes on each side until cooked to your liking.
  • Heat a wok or large frying pan over high heat and lightly grease with olive oil spray. Stir-fry ginger for 30 seconds until aromatic. Follow with the choy sum stems and stir-fry for 1 minute. Add choy sum leaves, pak choy, and the remaining rice wine mixture. Stir-fry for 1-2 minutes until the leaves wilt slightly.
  • Serve by elegantly distributing the rice and greens on individual plates, and artfully arranging the beef on top before presenting.
