Honey-soy beef with sweet potato and Asian greens

Beef steaks with spicy sweet potatoes for a nutritious meal.
Ingredients:
  • 42.00 gm salt-reduced soy sauce
  • 40.00 ml mirin (rice wine)
  • 7.20 gm honey
  • 4 (about 125g each) beef fillet steaks
  • 700g orange sweet potato (kumara), peeled, coarsely chopped
  • ProChef Olive Oil Spray
  • 2 tsp finely grated ginger
  • 1 long fresh red chilli, deseeded, finely chopped
  • 20.00 ml chopped fresh coriander
  • Steamed Asian greens, to serve
Instructions:
  • In a shallow glass or ceramic dish, mix together soy sauce, mirin, and honey. Add the beef and toss to ensure it's fully coated. Cover with plastic wrap and refrigerate for 30 minutes to allow the flavors to meld and the meat to marinate beautifully.
  • Boil sweet potatoes until tender. Drain and mash with a potato masher until almost smooth in the same pan.
  • Preheat a hot chargrill and lightly grease with olive oil spray. Drain the marinated beef and grill for 2-3 minutes on each side until it reaches your desired doneness. Rest the beef on a plate, covered loosely with foil, for 2 minutes before serving.
  • In a small frying pan over medium heat, heat the oil. Add the ginger and chili, cook for 1 minute until fragrant. Mix in with coriander, sweet potato, and season with pepper.
  • Arrange the sweet potato mixture and Asian greens on serving plates, then add the beef on top before serving promptly.
