Honey-soy braised pork

Tender spiced pork in rich, flavorful sauce - perfect for a cozy winter dinner.
Ingredients:
  • 2kg-piece boneless pork shoulder
  • 125ml (1/2 cup) soy sauce
  • 125ml (1/2 cup) sweet sherry
  • 125ml (1/2 cup) honey
  • 2 whole star anise
  • 5cm-piece fresh ginger, peeled, thinly sliced
  • 1 x 7cm cinnamon stick
  • 625ml (2 1/2 cups) chicken style liquid stock
  • 40.00 gm water
  • 10.00 gm cornflour
  • Steamed white rice, to serve
  • Steamed Asian greens, to serve
Instructions:
  • Add the pork to a large heavy-based saucepan along with soy sauce, sherry, honey, star anise, ginger, and cinnamon.
  • Pour in the stock until it reaches three-quarters of the way up the pork in the pan, adding more stock or water if needed. Heat over medium heat until simmering, then reduce to very low heat. Simmer gently with the lid on, skimming the surface occasionally and flipping the pork every half hour, for 3 hours or until the pork is tender.
  • Move the pork to a spacious bowl and cover it with foil to keep it warm. Place a large sieve lined with paper towel over a large bowl. Strain the cooking liquid through the lined sieve into the bowl. Pour the liquid back into the saucepan over medium heat and let it simmer.
  • Mix the water and cornflour together until smooth, then pour the mixture into the pan. Stir and cook for 2 minutes until the sauce boils and thickens slightly.
  • Slice the pork thickly across the grain, then portion out the rice and greens into serving dishes. Finally, add the pork and sauce on top before serving.
