Whip up flavorful horseradish mashed potatoes in just 30 minutes for a unique side dish!
Ingredients:
  • 4 medium unpeeled boiling potatoes (about 1 1/2 pounds), cut into 1/2-inch slices
  • 1/3 cup plain low-fat or fat-free yogurt
  • 1 tablespoon prepared horseradish
  • 1/2 teaspoon salt
  • 2 to 4 tablespoons fat-free (skim) milk
  • Chopped fresh parsley, if desired
Instructions:
  • In a 3-quart saucepan, bring 1 inch of water to a boil. Add the potatoes and simmer over low heat for about 15 minutes until tender. Drain the potatoes and return them to the saucepan. Shake the pan over low heat to dry the potatoes, then remove from heat.
  • Mash potatoes until exceedingly smooth. Incorporate yogurt, horseradish, and salt. Gradually mix in milk, beating well after each addition (the quantity will vary based on the type of potatoes). Whip vigorously until achieving a light, fluffy consistency. Finish with a garnish of parsley.
