Horseradish pork with rosemary and garlic potatoes

Elevate juicy pork chops with flavorful garlicky mustard and horseradish cream.
Ingredients:
  • 600g baby white potatoes
  • 1 garlic bulb, halved
  • 2 tsp fresh rosemary leaves, chopped
  • 60ml olive oil
  • 150g green beans, trimmed
  • 20.00 ml horseradish cream
  • 1 garlic clove, crushed
  • 11.80 gm wholegrain mustard
  • 4 Pork Loin Chops
  • Flat-leaf parsley, to serve
Instructions:
  • Preheat your oven to 180C. Toss potatoes, halved garlic, rosemary, and 2 tablespoons of oil in a roasting pan. Roast for 40 minutes. Then, add beans to the pan, toss, and roast for another 10 minutes until potatoes are golden and beans are tender.
  • In a small bowl, mix together the horseradish cream, crushed garlic, mustard, and remaining oil. Season with salt. Rub the horseradish mixture all over the pork until well coated.
  • Preheat a char-grill pan over medium heat. Grill the pork for 3 minutes on each side, or until golden brown and cooked to your preference. Place the pork on a plate, cover, and let it rest for 5 minutes before serving.
  • Serve the delicious pork and potato mixture on plates, season it, and sprinkle with fresh parsley for a burst of flavor.
