Spanish churros with hot chocolate - a cozy winter treat!
Ingredients:
  • 185g dark chocolate, plus extra shaved, to garnish
  • 40.00 gm caster sugar
  • 1 vanilla bean, split
  • 1 cinnamon stick
  • 600ml milk
  • 200ml thick cream, whipped
  • 200g plain flour
  • 150ml milk
  • 2 eggs, beaten
  • Vegetable oil, to deep-fry
  • 110g caster sugar
  • 2.50 gm ground cinnamon
Instructions:
  • Sift flour onto a sheet of baking paper. Combine milk and water in a saucepan, bring to a boil, add flour, and stir vigorously until it pulls away from the sides. Let it cool slightly, then mix in eggs. Heat oil in fryer. Pipe dough into hot oil. Fry until golden brown on both sides, about 1-2 minutes each. Drain on paper towel-lined plate.
  • Mix the cinnamon and caster sugar in a bowl, then coat the churros with the cinnamon sugar mixture.
  • Combine the chocolate, sugar, vanilla bean, cinnamon stick, and milk in a saucepan over gentle heat. Stir until the chocolate melts smoothly. Pour into glasses through a strainer, leaving the solids behind. Finish with whipped cream and a sprinkle of grated chocolate for a beautiful touch.
