Irresistible sponge cake with delicious broiled coconut topping.
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 cup white sugar
  • 0.5 cup milk
  • 2 tablespoons butter
  • 0.25 cup packed brown sugar
  • 2 tablespoons butter, room temperature
  • 0.5 cup flaked coconut
  • 0.25 cup chopped walnuts
  • 4 tablespoons milk
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9-inch square pan.
  • In a large mixing bowl, use an electric mixer to beat eggs for 4 minutes. Gradually add sugar and beat until light and fluffy for 4 to 5 minutes.
  • Combine the flour and baking powder, then gently incorporate into the egg mixture until blended.
  • In a saucepan, warm up 1/2 cup milk and 2 tablespoons butter until the butter is melted. Slowly add this mixture into the batter while continuously mixing, then transfer the batter into the prepared pan.
  • Bake in a preheated oven until the cake is golden and a toothpick inserted into the center comes out clean, about 20-25 minutes.
  • Once the cake is out of the oven, preheat the broiler.
  • Cream together the brown sugar and butter until smooth. Add milk gradually until reaching desired consistency. Mix in coconut and nuts. Spread the mixture over the warm cake and broil 4 inches from heat for 3 to 4 minutes, until golden brown.
