Hot-smoked salmon and rice salad recipe

Quick and delicious salmon rice salad, 5 ingredients, ready in 10 minutes for any meal!
Ingredients:
  • 2 bunches broccolini, trimmed, halved
  • 2 x 250g packets microwave black rice (see note)
  • 2 x 150g packets hot-smoked salmon with cracked pepper, skin removed, flaked
  • 2 small Lebanese cucumbers, peeled in ribbons (see note)
  • 60ml (1/4 cup) Japanese Dressing Sesame Soy Sauce
Instructions:
  • Add the broccolini to a large heatproof bowl and cover with boiling water. Let it sit for 1-2 minutes until tender-crisp. Drain and then refresh by running cold water over the broccolini.
  • Cook the rice according to the instructions on the packet. Serve the broccolini, salmon, rice, and cucumber on individual plates or a large platter. Pour the dressing over the salad and mix well. Season generously.
