Whip up homemade French crêpes effortlessly with a blender batter and skillet. Get creative with sweet or savory fillings!
Ingredients:
  • 3 large eggs
  • 2 1/3 cups milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Pinch of salt
  • 2 1/3 cups (290g) flour
  • Butter for the pan
Instructions:
  • Create the crêpe batter by blending eggs, milk, sugar, vanilla, salt, and flour in a blender for 7 to 10 seconds until smooth. Transfer the batter to a bowl. Refrigerate the batter for up to 3 days; if it thickens, simply mix in more milk until it reaches the consistency of heavy cream before cooking.
  • Heat the 8- or 10-inch non-stick skillet or well-seasoned crêpe pan over medium heat until hot, then coat the bottom with a thin layer of melted butter using a stick of butter.
  • Begin cooking the crêpes by pouring 1/3 cup of batter into the center of the pan. Quickly tilt and swirl the pan to evenly spread the batter. Cook for 1 to 2 minutes until the crêpe turns golden on the bottom.
  • Flip the crêpe: Loosen the edge with a rubber spatula, then gently and quickly flip it to the other side using your fingertips or a spatula for ease.
  • Continue cooking for 30 seconds more, until the crêpe achieves a golden bottom, then transfer to a plate.
  • Continue layering the crêpes on top of each other on the plate until all the batter is used.
  • To assemble the crêpes, lay one crêpe on a plate and add your favorite filling. Roll or fold the crêpe, top with extra toppings if desired, and serve warm. To store, cool the crêpes, cover with plastic wrap, refrigerate for up to 3 days, and reheat in a buttered skillet before serving.
