Make microwave jam quickly: strawberry, peach, blackberry, or grape. No canning needed.
Ingredients:
  • 2 to 3 cups berries or other diced fruit
  • 1/4 to 1/2 cup sugar, honey, or your favorite sweetener
  • 1 to 2 tablespoons lemon juice, to taste
Instructions:
  • Prepare the fruit: Discard any seeds, cores, pits, or nonedible parts. You can choose to leave the peels on or remove them. Cut larger fruits like peaches and strawberries into small pieces. Berries can be kept whole, if desired.
  • Combine prepared fruit with 1/4 to 1/2 cup of sugar, 1 to 2 tablespoons of lemon juice (to taste) in a glass measuring cup or microwave-safe bowl. Gently mash berries. Allow fruit to sit for at least half an hour until sugar dissolves and becomes syrupy.
  • Microwave the fruit, uncovered, at full power for 10 minutes, stirring halfway through. The fruit juices will bubble up as the fruit cooks, quadrupling in volume. Carefully remove the hot bowl using oven mitts, stir the fruit (which will look quite loose and liquid), then return it to the microwave for another 5 minutes.
  • Using oven mitts, take the fruit out of the microwave and give it another stir. The jam may appear syrupy, feel free to mash the fruit against the bowl for a smoother texture or keep it chunkier.
  • Microwave the jam in 2- to 3-minute intervals, stirring in between, until the liquid thickens into a sticky syrup that coats the back of the spatula and falls heavily into the bowl. It's normal if the jam is still a bit loose; it will firm up as it cools. This usually takes about 15 minutes. If unsure, lean towards undercooking to avoid crystallization. If the jam remains loose after cooling, microwave for a few more minutes.
  • Transfer the jam to a canning jar or storage container. Allow it to cool on the counter, then cover and store in the refrigerator for several weeks or freeze for up to three months.
