Lime marmalade

Brighten winter with zesty lime marmalade, perfect on warm buttered toast.
Ingredients:
  • 1kg (about 11) limes
  • 2L (8 cups) cold water
  • 1.7kg caster sugar
Instructions:
  • Halve the limes and squeeze the juice into a glass jug. Cover the jug with plastic wrap and refrigerate. Trim the narrow end of each lime half and soak in warm water in a large bowl for 6 hours or overnight to soften. Drain before using.
  • Quarter each lime half and slice thinly into 2mm strips. Combine the lime strips, lime juice, and cold water in a heavy-based saucepan. Bring to a boil over medium-high heat, then reduce to low heat. Cover and simmer for 50 minutes to 1 hour until the rind is tender.
  • - Stir in the sugar and cook for 10-15 minutes until dissolved. Increase heat to medium-high. Boil, stirring frequently, skimming off any scum, for 45-55 minutes until marmalade reaches desired consistency. Transfer to sterilized jars and store in a cool, dry place or in the fridge once open.
