Make perfect homemade mayonnaise effortlessly using a blender or food processor with this simple guide. Master the art of mayo in no time!
Ingredients:
  • 1 whole egg or 1 egg yolk
  • 1 teaspoon Dijon mustard, or 1/2 teaspoon dry mustard powder
  • 1 tablespoon white or red wine vinegar
  • 1 tablespoon water, if using only an egg yolk
  • 1 cup neutral oil (like vegetable, grapeseed, or canola)
  • A dew dashes of Tabasco, optional
  • Salt to taste
  • Freshly ground black pepper to taste (optional; I don’t bother)
Instructions:
  • Blend together the egg, mustard, vinegar, and water in a blender or food processor until just combined, avoiding aeration.
  • With the machine running, gradually stream the oil into the blender or food processor. The oil should be poured from a glass measuring cup in a slow, steady stream while the machine is in operation. The mixture will start off looking thin and yellow, but keep pouring until it thickens and becomes creamy, giving you a smooth and luscious finish.
  • After all the oil is added, turn off the machine and remove the mayonnaise. Season with salt and optionally add Tabasco to taste. To better gauge the flavor, try it with a carrot stick or piece of lettuce. Store tightly covered in the refrigerator for up to one week.
