Roasted red skin potatoes with thyme, olive oil, and red bell pepper, caramelized to perfection by Chef John.
Ingredients:
  • 0.25 cup olive oil, or more if needed
  • 2 pounds red potatoes, cut into evenly sized pieces
  • 0.5 large red bell pepper, seeded and cut into 1-inch pieces
  • 5 fresh thyme sprigs, or to taste
  • kosher salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Drizzle olive oil over a sturdy baking dish like enameled cast iron. Add potatoes and toss to coat evenly. Sprinkle with red bell pepper, thyme sprigs, kosher salt, black pepper, and cayenne pepper.
  • After 30 minutes in the preheated oven, give the vegetables a toss. If some potatoes are sticking, leave them be. Pop it back in the oven for another 20 minutes.
  • Toss the vegetables once more, ensuring the potatoes touch the bottom of the dish to brown evenly. Bake for an additional 15 minutes until the potatoes are golden brown and tender.
  • Allow the potatoes to sit in the turned-off oven for an extra 15 minutes. Give them one final toss. Season with salt, black pepper, and cayenne pepper before transferring to a serving bowl.
