Apple and custard streusel slice

Sweet sugary crust with roasted almonds boosts flavor and crunch to decadent apple slice.
Ingredients:
  • 125g butter, melted, cooled
  • 161.25 gm caster sugar
  • 225.00 gm self-raising flour
  • 400g can pie apple, chopped
  • 40.00 ml flaked almonds
  • 15.00 gm vanilla custard powder
  • 30.00 gm caster sugar
  • 193.13 gm milk
  • 125.00 ml plain flour
  • 49.50 gm self-raising flour
  • 59.40 gm brown sugar
  • 1.25 gm ground cinnamon
  • 80g butter, chilled, chopped
Instructions:
  • To make the custard, in a small saucepan, mix custard powder and sugar. Slowly pour in milk while stirring until smooth. Heat over medium-high heat, stirring constantly until it just boils and thickens, about 5 minutes. Remove from heat and transfer to a heatproof bowl. Cover the surface with plastic wrap and chill in the refrigerator for 1 hour until cold.
  • Prepare the Streusel topping by combining flours, sugar, and cinnamon in a food processor. Add butter and process until a dough forms. Wrap the dough in plastic wrap and freeze for 1 hour.
  • Preheat the oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line it with baking paper, allowing 3cm to extend above the edges of the pan for easy removal.
  • In a bowl, combine butter, sugar, flour, and egg. Mix thoroughly. Press mixture onto the bottom of the prepared pan. Bake until golden, about 10 to 15 minutes. Allow to cool completely.
  • Drain the apple slices on a paper towel and gently pat them dry. Spread the custard over the base, then arrange the apple slices on top. Remove the streusel from the plastic packaging and grate it over the slice. Sprinkle with almonds. Bake for 25 to 30 minutes or until golden. Allow to cool in the pan. Serve by cutting into bars.
