How to Peel and Cut a Butternut Squash

Master cutting butternut squash safely and easily with our foolproof instructions.
Ingredients:
  • A sharp, heavy, chef's knife
  • One butternut squash, 1 1/2 to 3 pounds
Instructions:
  • Trim the ends: With a sharp chef's knife, slice off about 1/4-inch from both ends of the squash for an even cut.
  • Peel the squash by firmly holding it in one hand and using a sharp vegetable peeler in the other hand. Alternatively, stand the squash upright and peel it in downward strokes.
  • Cut the squash in half by standing it upright on a stable surface. Make one long cut from the top to the bottom using a heavy chef's knife. If needed, gently tap on the ends of the knife with a rubber mallet to help cut through the squash.
  • Remove the seeds: Use a metal spoon to scoop out the seeds and stringy pulp from the squash cavity. (Optional: Consider preparing the seeds like toasted pumpkin seeds.)
  • Slice squash halves lengthwise to preferred width: Place squash halves cut side down on cutting board for stability, then slice into desired width pieces, following recipe instructions.
  • Slice and cube the squash: Stack a few slices at a time and cut lengthwise, then crosswise to create 1/2-inch cubes. One 1 1/2 pound butternut squash will make about 4 cups cubed. We'd love to hear your feedback on this recipe - please rate and review!
