Hummus with crisp lamb

Start your celebration with a tantalizing crispy lamb and hummus appetizer perfect for summer gatherings.
Ingredients:
  • 2 x 400g cans chickpeas, rinsed, drained
  • 280g (1 cup) Greek Style Yoghurt
  • 48.00 gm tahini (see top tips)
  • 1.88 gm ground cumin
  • 60ml (1/4 cup) olive oil, plus extra, to drizzle
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1/2 tsp ground allspice
  • 1.25 gm ground cinnamon
  • 600g lamb mince
  • 22.20 gm tomato paste
  • 20.00 ml pomegranate molasses (see top tips)
  • 1 long green chilli, seeded, finely chopped
  • 40.00 ml slivered almonds, roasted
  • 62.50 ml small mint leaves
  • Ciabatta bread, sliced, toasted, to serve
Instructions:
  • Blend chickpeas, yogurt, tahini, lemon juice, 1/4 tsp cumin, 1 tbsp oil, and 1 tsp salt in a food processor until velvety. Spread the creamy mixture into a broad serving dish.
  • Heat 2 tablespoons of oil in a large frying pan over medium heat. Sauté onion for 5 minutes until soft. Stir in garlic, allspice, cinnamon, and 1/2 teaspoon of cumin, cooking for 1 minute. Increase heat to high, add lamb mince, and cook for 15 minutes until browned and crispy. Stir in tomato paste, pomegranate molasses, and 1 teaspoon salt, cooking for an additional 2 minutes.
  • Spread the flavorful lamb mixture over creamy hummus, garnish with spicy chili, crunchy almonds, and fresh mint leaves. Enjoy with crispy toasted ciabatta on the side.
