Hungarian Poppy Seed Filling

Versatile poppy seed filling enhances breads, pastries, and coffee cakes.
Ingredients:
  • 0.5 pound poppy seeds
  • 1 cup milk
  • 0.25 cup margarine
  • 0.75 cup white sugar
  • 1 pinch salt
  • 2 eggs, beaten
Instructions:
  • Mill or grind the poppy seeds until finely ground.
  • In a saucepan, gently melt together milk, margarine, and sugar until sugar dissolves, stirring frequently. Slowly pour half of the warm milk into beaten eggs while whisking continuously. Return egg and milk mixture to the saucepan.
  • Cook and stir the mixture until it thickens enough to coat the back of a metal spoon. (Check by running your finger down the coated spoon to ensure it leaves a clear line.) Mix in the poppy seeds thoroughly.
  • Allow the mixture to cool off before using and refrigerate any leftover filling for up to five days.
