Ice-cream pudding with sesame shards

Indulge in a decadent mango cream dessert with crunchy sesame snaps, a perfect sweet ending to any meal.
Ingredients:
  • 2 x 395g cans sweetened condensed milk
  • 50g (1/2 cup) coconut milk powder
  • 1 x 600ml ctn thickened cream
  • 360g coarsely chopped mango flesh (see note)
  • 1 large mango, peeled, thinly sliced
  • 1 x 40g pkt Golden Days Natural Products Sesame Snaps, broken into shards
Instructions:
  • Cover the inside of a 2L (8-cup) pudding basin with two layers of plastic wrap, leaving some extra wrap hanging over the edges.
  • In a large bowl, combine sweetened condensed milk and coconut milk powder using a balloon whisk. Stir in cream and chopped mango until smooth. Transfer the mixture to the lined basin, cover with plastic wrap, and freeze for 8 hours until firm.
  • Chill a serving platter in the freezer. Submerge the basin in hot water for 1 minute to release the ice-cream. Invert pudding onto the platter and freeze for 20 minutes or until solid.
  • Garnish the pudding with fresh mango slices and crispy sesame snap pieces. Serve right away.
