Inventive ice cream sandwich: brownie bread. Delicious!
Ingredients:
  • 125g unsalted butter, chopped
  • 125g dark chocolate, chopped
  • 3 eggs, lightly whisked
  • 335g (1 1/2 cups) white sugar
  • 115g (3/4 cup) plain flour
  • 30g (1/4 cup) Dutch cocoa powder
  • 4.40 gm vanilla extract
  • Pinch of salt
  • 4 scoops caramel peanut brittle ice-cream
Instructions:
  • Preheat the oven to 180C/160C fan forced, then grease a 20cm square cake pan and line it with baking paper.
  • In a heatproof bowl, melt the butter and chocolate over a saucepan of simmering water (ensure the bowl doesn't touch the water). Stir until melted. Remove from heat. Quickly mix in egg, sugar, flour, cocoa powder, vanilla, and salt just until combined. Pour into prepared pan. Bake for 30 minutes or until a skewer inserted in the center comes out with moist crumbs clinging. Let it cool completely.
  • Cut out 8 circles from the brownie using a 6.5cm cutter.
  • Assemble sandwich with 4 generous scoops of decadent caramel peanut brittle ice cream.
