Ice-cream sandwich with strawberry daiquiri sauce

Decadent boozy brownie slice for adults.
Ingredients:
  • Melted butter, to grease
  • 250g butter, chopped
  • 250g dark chocolate, coarsely chopped
  • 3 eggs
  • 200g (1 cup, firmly packed) brown sugar
  • 150g (1 cup) plain flour
  • 1 x 1L ctn vanilla ice-cream
  • 1 x 250g punnet strawberries, washed, hulled
  • 6.00 gm icing sugar mixture
  • 20.00 ml Cointreau liqueur
  • 20.00 ml white rum
Instructions:
  • Preheat the oven to 170°C. Grease two 20 x 30cm lamington pans with melted butter and line the base and 2 long sides with non-stick baking paper. Then, melt the butter and dark chocolate together in a heatproof bowl placed over simmering water. Stir with a metal spoon until smooth.
  • In a large bowl, use an electric beater to whisk the eggs and brown sugar until they are thick and pale. Mix in the chocolate mixture and vanilla until well combined.
  • Sift the flour over the egg mixture and gently fold with a metal spoon until fully incorporated. Divide the mixture evenly among the pans and bake for 25 minutes or until a skewer comes out clean when inserted into the center. Allow the cakes to cool completely before moving on to the next step.
  • For the strawberry daiquiri sauce: Combine strawberries, icing sugar, Cointreau, white rum, and lime juice in a food processor. Blend until smooth, then strain the mixture through a fine sieve, pressing the puree through with a spoon to remove seeds.
  • Cut 12 brownie discs using a 9cm-diameter round cutter. Place one brownie disc on each plate, add a scoop of ice cream, top with another brownie disc, and finish with a drizzle of strawberry sauce. Enjoy!
