Ice-cream with hot blueberry sauce

Ingredients:
  • 150g (1 punnet) blueberries
  • 115g (1/2 cup) caster sugar
  • 250ml (1 cup) water
  • 2 star anise
  • 7.50 gm arrowroot
  • 20.00 gm water, extra
  • 4 scoops vanilla ice-cream
Instructions:
  • In a medium saucepan, combine blueberries, sugar, 250ml (1 cup) water, and star anise. Stir over medium-low heat until sugar dissolves. Increase heat to high, bring to a boil, then reduce heat to medium, and simmer without stirring for 5 minutes until slightly syrupy.
  • In a small bowl, combine arrowroot with the extra 1 tablespoon of water until smooth. Stir the arrowroot mixture into the pan off heat. Bring to a boil over high heat. Set aside for 5 minutes to develop flavors. Remove and discard the star anise. Spoon ice-cream into serving glasses, top with sauce, and serve right away.
  • For microwave method: In a microwave-safe bowl, mix blueberries, sugar, 1 cup water, and star anise. Microwave uncovered on High for 2 minutes until sugar dissolves, stirring every minute. Switch to Medium-High for 3 minutes until slightly syrupy. In a small bowl, combine arrowroot with 1 tablespoon water until smooth. Add to the sauce, microwave on High for 1 minute until boiling. Let it sit for 5 minutes to enhance flavors. Remove star anise. Pour sauce over ice cream in serving glasses and enjoy immediately.
