Iced Christmas puddings with chocolate sauce

Get festive with this decadent Christmas frozen treat!
Ingredients:
  • 1 x 375g pkt sun-dried mixed fruit
  • 125ml (1/2 cup) brandy
  • 100g good-quality dark chocolate
  • 150g pandoro or brioche
  • 200g (1 cup, firmly packed) brown sugar
  • 8 egg yolks
  • 750ml (3 cups) thickened cream
  • 2.50 gm mixed spice
  • 1 x 200g pkt good-quality dark chocolate, coarsely chopped
  • 185ml (3/4 cup) thickened cream
Instructions:
  • Preheat your oven to 200°C. Line twelve 150ml metal dariole moulds or ramekins with plastic wrap. In a large bowl, mix the fruit and brandy, then let it sit for 1 hour to macerate.
  • Melt the chocolate in a heatproof bowl set over a saucepan of simmering water, making sure the bowl doesn't touch the water, stirring constantly with a metal spoon.
  • Tear the pandoro or brioche into rough breadcrumbs and transfer to a bowl. Mix in 55g (1/4 cup) sugar. Spread the mixture on a baking tray. Bake in the oven, giving it a stir every now and then, until golden brown, about 12-15 minutes. Allow it to cool before using.
  • In a heatproof bowl, use an electric hand beater to whisk egg yolks and sugar until fluffy. Place the bowl over simmering water (avoid touching the water) and whisk for 5 minutes until thick and pale. Remove from heat and whisk for an additional 2-3 minutes until cool.
  • Whisk cream with an electric beater until soft peaks form. Gently fold in the egg yolk mixture, then mix in the dried fruit, chocolate, breadcrumbs, and mixed spice. Spoon into molds, smooth the tops, then freeze for 6 hours or overnight.
  • Create the sauce by combining chocolate and cream in a heatproof bowl set over a saucepan with simmering water (ensure bowl doesn't touch the water). Stir with a metal spoon until chocolate melts and the mixture becomes smooth. Let it cool for 20 minutes.
  • Remove the puddings from the freezer and invert them onto a baking tray. Return to the freezer until needed.
  • Plate the puddings, generously drizzle with chocolate sauce, and serve promptly.
