Boost your holiday mornings with a refreshing Christmas iced coffee to beat the early wake-up calls from the kids.
Ingredients:
  • 125.00 ml ground espresso coffee beans
  • 500.00 gm boiling water
  • white sugar, to taste
  • 2 litres vanilla ice-cream
Instructions:
  • Add coffee to a plunger, pour boiling water, stir, wait for 3 minutes, press, transfer to a heatproof jug, add sugar, stir until dissolved, refrigerate until serving.
  • In a blender, combine chilled coffee and 8 scoops of ice-cream. Blend until smooth and frothy. Spoon a small scoop of the remaining ice-cream into each serving glass. Pour the blended espresso over the ice-cream. Serve.
