Cheesy, spicy chimichangas loaded with Impossible Burger, beans, and salsa, baked to crispy perfection.
Ingredients:
  • 1 (12 ounce) package Impossible Burger
  • 1 (16 ounce) can vegetarian refried beans
  • 1 cup shredded Mexican cheese blend
  • 0.5 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon dried oregano
  • 8 (10 inch) flour tortillas
  • 2 tablespoons vegetable oil
Instructions:
  • Heat your oven to 400°F (200°C).
  • Brown and crumble Impossible Burger in a large nonstick skillet over medium-high heat, stirring occasionally, for 5 to 6 minutes.
  • Combine crumbles, refried beans, cheese, salsa, chili powder, cumin, and oregano until well mixed.
  • Place a generous 1/3 cup of filling in the center of each tortilla on a flat work surface.
  • Wrap the tortilla around the filling and roll it into a delicious burrito.
  • Lay chimichangas on a baking sheet lined with foil and gently brush with oil.
  • Bake until perfectly golden and crispy, for around 20 minutes.
