Ingredients:
  • 386.25 gm milk
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 chorizo sausages, roughly chopped
  • 1 red capsicum, deseeded, finely diced
  • 3 eggs, at room temperature
  • 75.00 gm self-raising flour
  • 250.00 ml grated tasty cheese
Instructions:
  • Preheat your oven to 200°C while you prepare a 24cm ceramic quiche dish by greasing it lightly.
  • In a non-stick pan over medium heat, sizzle the trio of onion, chorizo sausage, and capsicum in oil. Stir occasionally and cook until tender, which should take about 4 to 5 minutes. Once done, take it off the heat and let it rest for 5 minutes before proceeding.
  • Combine eggs, milk, and flour in a bowl, whisk until smooth. Add chorizo sausage mixture and cheese, mix well. Season with salt and pepper to taste.
  • Transfer the mixture into a quiche dish and bake for 45-50 minutes until the center is set. Let it stand for 10 minutes before serving.
