Impossibly Easy Broccoli and Red Pepper Pie

Savory broccoli and red pepper pie with a cheesy twist, made effortlessly with Original Bisquick® mix.
Ingredients:
  • 2 cups chopped broccoli
  • 1/3 cup chopped onion
  • 1/3 cup chopped red or yellow bell pepper
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/2 cup Original Bisquick™ mix
  • 1 cup milk
  • 1/4 teaspoon pepper
  • 2 eggs
Instructions:
  • Preheat the oven to 400°F and generously coat a 9-inch glass pie plate with cooking spray.
  • In a 2-quart saucepan, bring 1 inch of water to a boil. Add broccoli, cover, and simmer for about 5 minutes until almost tender. Drain well.
  • Combine the broccoli, onion, bell pepper, and cheese in a pie plate. In a medium bowl, whisk the remaining ingredients until blended, then pour into the pie plate.
  • Bake until golden brown and a knife inserted in the center comes out clean, approximately 30-35 minutes. Allow it to rest for 5 minutes before serving.
