Indulge in a simple and delicious homemade cheesecake made effortlessly with Bisquick® mix.
Ingredients:
  • 3/4 cup milk
  • 2 teaspoons vanilla
  • 2 eggs
  • 1/2 cup Original Bisquick™ mix
  • 2 packages (8 ounces each) cream cheese, cut into about 1/2-inch cubes and softened
Instructions:
  • Preheat oven to 350°F and generously grease a 9-inch pie plate.
  • In a blender, combine milk, vanilla, eggs, sugar, and Bisquick mix. Blend on high speed for 15 seconds. Add cream cheese and blend for an additional 2 minutes. Pour the mixture into a pie plate.
  • Bake for 40 to 45 minutes until a knife inserted in the center comes out clean. Let it cool, then chill in the fridge. Optionally, make the topping by mixing 1 cup sour cream, 2 tablespoons sugar, and 2 teaspoons vanilla. Spread over the cooled cheesecake and serve with fruit. Cover any leftovers and refrigerate.
