Delicious raspberry cheesecake made with Bisquick® mix, a sure crowd-pleaser!
Ingredients:
  • 2 teaspoons vanilla
  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup Original Bisquick™ mix
  • 2 packages (8 oz each) cream cheese, cut into 16 pieces and softened
  • 1 cup fresh raspberries
  • 2 tablespoons sugar
Instructions:
  • Preheat oven to 325°F. Grease bottom of a 9-inch glass pie plate with cooking spray. In a blender, combine milk, vanilla, eggs, 3/4 cup sugar, and Bisquick mix. Blend on high speed for 15 seconds. Add cream cheese and blend for an additional 2 minutes. Pour mixture into the prepared pie plate.
  • In a blender, combine 1/2 cup of raspberries and 2 tablespoons of sugar. Blend on high speed for 15 to 20 seconds until smooth. Spoon dollops of the raspberry sauce on top of the cream cheese mixture, then swirl with a wooden skewer or toothpick.
  • Bake for 28-32 minutes until the edge of the pie is set but the center is still slightly wiggly. Allow to cool at room temperature for about 1 hour until completely cooled.
  • Chill for a minimum of 4 hours. Top with the remaining 1/2 cup of raspberries and keep refrigerated.
