Indian Style Basmati Rice

Fragrant Indian rice with basmati, toasted spices, and crispy onions - a flavorful side dish for curry.
Ingredients:
  • 1.5 cups basmati rice
  • 2 tablespoons vegetable oil
  • 1 (2 inch) piece cinnamon stick
  • 2 pods green cardamom
  • 2 whole cloves
  • 1 tablespoon cumin seed
  • 1 small onion, thinly sliced
  • 2.5 cups water
  • 1 teaspoon salt, or to taste
Instructions:
  • Assemble all ingredients.
  • Place rice in a bowl and cover with water. Allow to soak for 20 minutes.
  • After soaking for 10 minutes, warm oil in a large pot over medium heat. Add cinnamon stick, cardamom pods, and cloves, followed by cumin seed. Stir gently.
  • Sauté until fragrant and toasted for about a minute. Add sliced onion and continue stirring.
  • Cook the onion until it becomes soft and golden brown, which should take around 10 minutes.
  • Once the water is drained from the rice, stir it into the pot and cook, stirring occasionally, until lightly toasted, for approximately 3 minutes.
  • Add water and salt to a pot and bring it to a gentle boil. Cover the pot, reduce the heat to low, and simmer for about 15 minutes until all the water is absorbed.
  • Allow to rest for 5 minutes, then gently separate the grains with a fork before enjoying.
