Indian-style burgers with minted yoghurt

Savor a delectable Indian-spiced beef burger with refreshing mint yogurt, eggplant, and cucumber toppings.
Ingredients:
  • 800g sweet potato
  • 18.20 gm olive oil
  • 1 kg Beef 3-Star Mince
  • 100g curry paste
  • 62.50 ml coriander leaves, finely chopped
  • 2 garlic cloves, crushed
  • 1 egg, lightly whisked
  • 280g yoghurt
  • 40.00 ml mint leaves, finely chopped
  • 21.00 gm lemon juice
  • 6 Kaiser Rolls, split, toasted
  • 250.00 ml chargrilled eggplant, sliced
  • 2 small Lebanese cucumber, peeled into ribbons
  • 110g chutney
Instructions:
  • Preheat oven to 220C. Spread sweet potato on a baking tray lined with baking paper, drizzle with 2 teaspoons of oil, and season with salt and pepper. Bake for 30 minutes until golden and crisp.
  • Combine beef mince, curry paste, coriander, garlic, and egg. Season with salt and pepper, then shape into 6 patties. Heat oil in a frying pan over medium heat and cook patties in batches for 5-6 minutes per side until cooked through.
  • In a small bowl, mix Greek yoghurt, mint, and lemon juice. Season with salt and pepper. Spread half of the mint yoghurt on the bottom half of the rolls. Top with the patties, eggplant, cucumber, and remaining yoghurt. Spread mango chutney on the top buns and assemble the burgers. Serve with sweet potato wedges.
