Savory bacon, cheddar, and broccoli frittatas baked in muffin tin for a customizable single-sized delight.
Ingredients:
  • 0.5 pound bacon
  • 1 cup chopped broccoli
  • 1.5 tablespoons water
  • 10 eggs
  • salt and ground black pepper to taste
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously spray a 12-cup muffin tin with cooking spray.
  • In a large skillet, cook bacon over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble when cool.
  • In a microwave-safe bowl, combine broccoli and water. Cover and microwave on high until tender, about 1 1/2 to 2 minutes. Remove cover carefully and drain any liquid before serving.
  • In a bowl, delicately crack open fresh eggs and whisk vigorously. Season generously with salt and pepper for added flavor.
  • In each muffin cup, create layers of crispy bacon and fresh broccoli, filling them one-third of the way. Carefully pour in the fluffy egg mixture, allowing a little room for expansion. Finish by generously sprinkling sharp Cheddar cheese on top.
  • Bake in the oven until a toothpick inserted in the center comes out clean or almost clean, for 15 to 20 minutes.
