Have fun making personalized mini banana bread loaves for kids' lunchboxes!
Ingredients:
  • Butter, to grease
  • 190g self-raising flour
  • 115g caster sugar
  • 125g butter, melted, cooled
  • 2 eggs
  • 2 ripe bananas, mashed
  • 150g icing sugar
Instructions:
  • Preheat the oven to 180°C and generously grease 8 mini loaf pans (1/2 cup each, 125ml). Mix the flour and sugar together in a large bowl.
  • Combine whisked butter and eggs with flour mixture and banana, mixing until fully incorporated.
  • Divide the cake batter evenly into the greased pans and use a spoon to level the surface. Bake for 18-20 minutes or until a skewer comes out clean when inserted in the center. Let it cool for 5 minutes, then transfer to a wire rack to cool completely.
  • Once the icing sugar has cooled completely, blend it with just enough water to create a smooth, pourable icing. Drizzle the icing over the cakes and let it set aside until hardened.
