Individual Honeycrisp Apple Tarts

Create an elegant apple tart easily with basic ingredients for beginner bakers to impress like a pro.
Ingredients:
  • 1 sheet frozen puff pastry
  • 2 tablespoons packed brown sugar
  • 1 tablespoon white sugar
  • 1 pinch ground cinnamon
  • 1 pinch salt
  • 4 teaspoons unsalted butter, divided
  • 1 teaspoon lemon juice
  • 2 large Honeycrisp apples
Instructions:
  • Prepare for the baking process by preheating your oven to 400 degrees F (200 degrees C), lining a baking sheet with parchment paper, and placing two 6-ounce ramekins within reach.
  • On a work surface, allow the puff pastry sheet to thaw for 5 minutes until it is partially frozen and very firm. Cut out 2 rounds of dough using a round pastry cutter the same size as your ramekins. Place them on the baking sheet and poke each round with a fork.
  • Bake in the oven until the pastries are puffed and golden brown on the bottom, usually around 15 minutes.
  • Transfer the pastries from the oven to a work surface by sliding off the parchment paper. Gently press down with a fork to slightly deflate them while still warm. Allow the pastries to cool.
  • Preheat the oven to 425 degrees F (220 degrees C). Combine brown sugar, white sugar, a pinch of cinnamon, and a very small pinch of salt in a bowl.
  • Generously coat each ramekin with 1 1/2 teaspoons of butter. Evenly distribute the sugar mixture among the ramekins, saving 1 1/2 teaspoons for later use. Gently shake the ramekins to settle and flatten the sugar mixture.
  • Pour 3 cups of cold water into a bowl and mix in lemon juice.
  • Trim 1/4 inch off the top and bottom of two apples, then cut each apple in half through the center.
  • Peel the apples, making long ribbons of flesh until you reach the core, letting them fall into the water. Ribbons should be 3 to 4 inches long.
  • Select and arrange 3-4 long ribbons on a work surface, overlapping the ends slightly to create one continuous ribbon.
  • Roll the ribbon tightly to create the tart's center, then stand it upright.
  • Wrap more ribbons around the center, overlapping as you go, until you form a coil matching the diameter of your ramekin. Transfer the apple coil to the ramekin, placing the flat side on top of the sugar. Repeat this process to create a second tart.
  • Drizzle 1/2 teaspoon of butter on each tart, then generously sprinkle with the remaining sugar mixture.
  • Place a pastry round over each tart, with the fork-poked side facing down on top of the apples.
  • Bake the pastries in the preheated oven for approximately 30 minutes until golden brown and bubbling. Remove from the oven and gently press the hot pastries down with a fork. Allow to cool for about 10 minutes before serving.
  • Carefully slide a knife around the edge of each pastry and gently flip them onto serving plates. Use a spoon to define the layers further by lightly running it around each tart for extra detail, if desired.
