Instant Pot® Pot Roast: A modern twist on a classic dish. Tender beef roast with veggies in a fraction of the time. Save this timeless recipe now!
Ingredients:
  • 2 to 3 lb boneless beef chuck roast, trimmed and cut in 4 pieces
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter
  • 2 cups chopped onions
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 8 medium carrots, peeled and cut into fourths
  • 3 celery stalks, cut into 1-inch pieces
  • 3 cloves garlic, finely chopped
  • 1 tablespoon chopped fresh thyme leaves
  • 8 baby red potatoes, cut in half
  • 3 tablespoons cornstarch
  • 3 tablespoons water
Instructions:
  • Season beef generously with salt and pepper. Grease the 6-quart Instant Pot® insert with cooking spray and set to SAUTE mode on normal. Melt butter in the insert, then sear beef for 4 to 6 minutes on each side until nicely browned. Use tongs to transfer the beef to a medium bowl.
  • Saute onions until soft and slightly caramelized. Pour in broth and mix well. Stir in carrots, celery, garlic, and thyme, then add potatoes and beef.
  • Secure the lid tightly and set the pressure valve to SEALING. Choose the MANUAL setting and cook on high pressure for 45 minutes. Once done, press CANCEL and switch the pressure valve to VENTING to quickly release the pressure.
  • Transfer the beef to a serving platter. In a small bowl, whisk together cornstarch and water. Set the pressure cooker to SAUTE mode on normal heat, bring the liquid to a simmer. Slowly stir in the cornstarch mixture and cook for 1 to 2 minutes until thickened, stirring frequently. Switch off the pressure cooker. Serve the vegetables with the beef.
