Whip up a savory corn chowder with smoked sausage and bacon in no time using your Instant Pot or pressure cooker for a satisfying family meal.
Ingredients:
  • 2 tablespoons olive oil
  • 8 ounces smoked sausage, diced
  • 2 slices bacon, diced
  • 1 large russet potato, chopped
  • 3 cups chicken broth
  • 2 ears corn, kernels cut from cob
  • 2 ears corn, cut into 1-inch rounds
  • 1 (14 ounce) can coconut milk
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons potato starch
  • 1 tablespoon water
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot®) using the Saute function. Drizzle in olive oil. Cook sausage and bacon in the hot oil for 2 minutes, stirring frequently. Add onion, cook until tender (about 3 more minutes). Toss in potato, saute for an additional minute. Pour in chicken broth, bring to a boil for 1 minute. Gently stir in corn kernels and corn cob rounds. Seal the lid tightly, set to high pressure, and adjust the timer for 6 minutes.
  • Allow the pressure to naturally release for 10 to 40 minutes following the manufacturer's instructions, then unlock and remove the lid.
  • 1. Heat up the saute function and bring the chowder to a lively boil. Pour in the coconut milk and season generously with salt and pepper. Let it bubble away until it thickens up, approximately 5 minutes. If you prefer a thicker consistency, whisk potato starch and water in a bowl and gently blend it into the chowder while stirring continuously until smooth.
