Modern twist on traditional German rotkohl, bursting with authentic flavor.
Ingredients:
  • 2 tablespoons butter
  • 3 tablespoons cider vinegar
  • 0.25 cup brown sugar
  • 0.5 teaspoon salt, or to taste
  • 0.25 cup onion, minced
  • 0.5 cup grated peeled apple
  • 2 pounds red cabbage, thinly sliced
  • 0.125 teaspoon ground cloves
  • 0.125 teaspoon ground allspice
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot® using the Saute function. Melt butter and then add apple cider vinegar, brown sugar, and salt. Stir well. Add onion, grated apple, and red cabbage and mix thoroughly. Seal the lid, then switch to the Steam function. Set the timer for 3 minutes and let the pressure build for 10 to 15 minutes.
  • After releasing pressure per manufacturer's instructions for about 5 minutes, carefully unlock and remove the lid, then stir in the ground cloves and allspice.
