Effortlessly make zesty lemon curd in minutes with the Instant Pot®. Sumptuously smooth and tangy.
Ingredients:
  • 0.5 cup white sugar
  • 0.5 cup lemon juice
  • 1 large egg
  • 1 large egg yolk
  • 0.25 cup butter, melted
Instructions:
  • In a blender, add sugar, lemon juice, egg, and egg yolk. Pulse briefly. With the blender running, slowly stream in melted butter. Blend until smooth with a slightly frothy consistency.
  • Pour the luscious lemon curd into a spacious 4-cup glass measurer (or any Instant Pot® safe container with a lid). Cover it with foil for optimal results.
  • Place a trivet in the Instant Pot® and pour 1 1/2 cups of water around it.
  • Secure the lid by closing and locking it. Choose high pressure following the manufacturer's guidelines, then set the timer for 10 minutes. Wait for 10 to 15 minutes for the pressure to build up.
  • Follow the manufacturer's instructions to naturally release pressure for 10 minutes. Then carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid.
  • Remove the container from the Instant Pot® and discard the foil. Whisk the mixture until smooth and well combined, ensuring to whisk until any lumps or curdles disappear.
  • As lemon curd cools, it will transform from thin to thick consistency. Refrigerate in a sealed container once cooled.
