Tender, moist Instant Pot rotisserie chicken - a family dinner favorite!
Ingredients:
  • 1 (2.5 pound) whole chicken
  • 1 lemon, cut into 4 wedges
  • 2 tablespoons olive oil
  • 1.5 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 1 cup chicken broth
Instructions:
  • Wash chicken and dry with a paper towel, then stuff cavity with lemon wedges.
  • Preheat the Instant Pot using the Sauté function. Combine olive oil, salt, garlic powder, paprika, and pepper in a bowl. Season the chicken with half of the spice mixture, place it in the pot, breast-side down, and cook until crispy, for 3 to 4 minutes.
  • Massage the remaining spice mixture onto the underside of the chicken. Using tongs, carefully flip the chicken and sauté for an additional minute. Take the chicken out of the pot.
  • Place the trivet in the pot, then add the chicken back in, breast side down on the trivet. Pour in the chicken broth, lock the lid, and select high pressure for 20 minutes. Allow pressure to build for 10-15 minutes. Use natural-release method for 10-40 minutes. Check meat temperature with an instant-read thermometer, which should read 165 degrees F (74 degrees C) near the bone.
