Quick and tender Instant Pot artichokes served with melted butter or zesty lemon juice for dipping.
Ingredients:
  • 1 cup water
  • 2 cloves garlic
  • 1 bay leaf
  • 4 artichokes, trimmed and stemmed
  • 2 tablespoons lemon juice
Instructions:
  • In a multi-functional pressure cooker like Instant Pot®, add water, garlic, bay leaf, and salt. Place the steamer in the pot and arrange artichokes trimmed top facing up. Drizzle with lemon juice. Lock the lid, select high pressure, and set the timer for 10 minutes following the manufacturer's instructions. Let the pressure build for 10 to 15 minutes.
  • After cooking, safely release pressure following the manufacturer's quick-release instructions for about 5 minutes. Then, unlock and remove the lid.
  • Allow to cool slightly before handling. Separate outer petals one by one. Use your teeth to scrape off the tender part of the petal. Discard the rest of the petal. Scoop out the fuzzy center near the stem and discard it. Enjoy the heart whole or chop it into pieces.
