Deliciously balanced blend of herbs, honey, lemon, and lavender. Can be cooked in Instant Pot or oven.
Ingredients:
  • 3 tablespoons herbes de Provence
  • 6 chicken legs
  • 4 chicken thighs
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 cloves garlic, sliced
  • 1.5 cups chicken stock
  • 4 tablespoons honey
  • 1 lemon, zested and juiced
  • 2 sprigs thyme, leaves picked
  • 1 tablespoon lavender flowers
  • 2 teaspoons cornstarch
Instructions:
  • Massage the herbes de Provence into the chicken legs and thighs for maximum flavor infusion.
  • Heat the multi-functional pressure cooker using the Saute function. Pour in 2 tablespoons of olive oil and sliced garlic. Add chicken legs and thighs, cook until browned on both sides for 5 to 7 minutes. Remove chicken and set aside. Pour in chicken stock, place a rack inside. Return chicken to the pot on top of the rack. Lock the lid, choose high pressure, set the timer for 25 minutes. Let the pressure build for 10 to 15 minutes.
  • While the chicken is cooking, make the sauce by whisking together honey, lemon zest, lemon juice, thyme leaves, remaining oil, and lavender flowers in a small bowl.
  • Position the oven rack 6 inches away from the heat source and preheat the broiler. Cover a baking sheet with aluminum foil.
  • After following the manufacturer's instructions, carefully release pressure for about 5 minutes. Remove the lid and transfer the chicken to a baking sheet. Brush the chicken generously with sauce, saving the rest for later.
  • Place the chicken in the oven and broil until golden brown, for approximately 2 minutes, keeping a close eye to avoid burning.
  • In a small saucepan over medium-high heat, combine the remaining sauce with one ladleful of liquid from the pressure cooker. Whisk in cornstarch and simmer until reduced by half or thickened to your liking, stirring often to avoid scorching, for 1 to 3 minutes. Serve the sauce alongside the chicken.
