Delicious Instant Pot® Indian pilau with basmati rice, peas, carrots, and spices, quick and easy!
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon cumin seeds
  • 0.25 cup diced red onion
  • 0.75 tablespoon garam masala
  • 0.5 teaspoon ground turmeric
  • 1.5 cups vegetable broth
  • 1 cup uncooked basmati rice, rinsed and drained
  • 0.5 cup frozen peas and carrots
  • 1 bay leaf
Instructions:
  • Heat oil in a multi-functional pressure cooker using the Saute function. Add cumin seeds and stir until they start to pop. Mix in onion and cook until beginning to soften, around 2 minutes. Season with garam masala, turmeric, and salt. Add vegetable broth, rice, frozen peas and carrots, and bay leaf, stirring well to combine.
  • Seal and secure the lid, then choose high pressure and set a 5-minute timer per the manufacturer's guidelines. Let the pressure build for 10 to 15 minutes.
  • Release pressure naturally following manufacturer's instructions for 10 to 40 minutes, then release any remaining pressure manually. Unlock and remove the lid, discard the bay leaf, taste and adjust seasoning to your liking before serving.
