Easy Instant Pot bangers and mash: Irish sausages and creamy mashed potatoes with flavorful onion gravy.
Ingredients:
  • 2 pounds potatoes, cut into 1 1/2- inch cubes
  • 1 pound Irish sausages
  • 0.25 cup butter
  • 2 tablespoons heavy whipping cream, or more to taste
  • 2 tablespoons butter
  • 1 cup beef broth, divided
  • 1 small onion, thinly sliced
  • 2 teaspoons all-purpose flour
  • 0.5 teaspoon browning sauce
Instructions:
  • In a multi-functional pressure cooker (like an Instant Pot), add potatoes and water. Layer sausages on top of the potatoes. Close and lock the lid. Cook on high pressure for 12 minutes following the manufacturer's guidelines; let the pressure build for 10 to 15 minutes.
  • Let the pressure release naturally per manufacturer's instructions for about 15 minutes, then perform quick release for remaining pressure for about 5 minutes.
  • Preheat the oven to a cozy 200 degrees F (95 degrees C).
  • Remove lid, transfer sausages to a plate, and place potatoes in a large bowl. Crush potatoes using a potato masher and mix in butter until melted. Gradually stir in whipping cream until desired consistency. Season with salt and pepper. Keep mashed potatoes warm in the preheated oven.
  • Prepare the gravy: Clean the pressure cooker pot and set it back on the cooker. Use the Sauté function to melt butter in the pot. Sear sausages in the butter until they turn golden on both sides, about 2 to 3 minutes per side. Place the sausages in an oven-safe dish and keep them warm in the oven.
  • Pour in 2 tablespoons of flavorful broth, gently stirring and scraping to lift up all the delicious browned bits. Cook onion until soft and nicely browned, about 3 to 4 minutes.
  • Combine flour and 2 tablespoons broth in a small bowl to make a slurry. Gradually whisk in remaining 12 tablespoons broth until smooth. Pour mixture into pot and cook, whisking often, until gravy thickens. Stir in browning sauce, season with salt and pepper, and enjoy!
  • Spoon warm mashed potatoes onto a plate, then add 2 sausages and pour over savory onion gravy before serving.
