Vibrant beet hummus, a colorful and tasty twist on classic dip, perfect for snacking or entertaining, made effortlessly in the Instant Pot.
Ingredients:
  • 3 cups vegetable broth
  • 1 cup dry garbanzo beans
  • 2 medium beets, peeled and cut into large pieces
  • 0.33333334326744 cup lemon juice
  • 3 tablespoons tahini
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
Instructions:
  • In a multi-functional pressure cooker (like Instant Pot), mix vegetable broth, garbanzo beans, and beets. Seal the cooker and set it to high pressure for 35 minutes following the manufacturer's guidelines. Let the pressure build for 10 to 15 minutes.
  • Use quick-release method following manufacturer's instructions, releasing pressure carefully for about 5 minutes. Unlock and lift lid.
  • Drain garbanzo beans and beets, reserving 1/3 cup liquid. Combine them in a food processor with lemon juice, tahini, olive oil, and garlic. Blend until creamy for about 3 minutes. Scrape the sides, pour in the reserved liquid, add cumin and salt, and blend for another minute.
