Quick and easy Instant Pot cranberry beans - no soaking needed!
Ingredients:
  • 1 small onion, chopped
  • 1 pound dried cranberry beans
  • 4 cups chicken broth
  • 1 (12 fluid ounce) can or bottle beer
  • 1 cup picante sauce
  • 0.5 cup chopped cilantro
  • 0.25 cup pickled jalapeno peppers
  • 1 tablespoon minced garlic
  • 2 teaspoons Mexican oregano
  • 1 teaspoon cumin
Instructions:
  • Preheat your Instant Pot by selecting the Sauté function.
  • Heat oil in the pot for 1 minute. Sauté onion for 2 minutes, then turn off the Sauté function.
  • Combine cranberry beans, chicken broth, beer, picante sauce, cilantro, jalapeño peppers, garlic, oregano, and cumin together, stirring until well mixed. Seal the lid tightly.
  • Follow the manufacturer's instructions to set the Instant Pot to high pressure. Set the timer for 45 minutes and allow the pressure to build for 10-15 minutes.
  • Let the pressure release naturally for 10 to 15 minutes following the manufacturer's directions. Then, season with salt and pepper to taste.
