Instant Pot Creme Brulee

"Indulge in instant, decadent French creme brulee with ease using the Instant Pot."
Ingredients:
  • 2 egg yolks
  • 2.5 tablespoons white sugar
  • 1 pinch salt
  • 3 teaspoons white sugar, or more to taste
Instructions:
  • Set up your multi-functional pressure cooker (such as Instant Pot) by placing a trivet inside and pour in 1 cup of water.
  • Microwave heavy cream until steaming hot, taking care not to boil, for about 45 seconds.
  • In a mixing bowl, combine egg yolks, 2 1/2 tablespoons of sugar, vanilla, and salt, whisking until smooth. Gradually whisk in 2 tablespoons of warm cream swiftly, then slowly incorporate the remaining cream. Divide the mixture among three 6-ounce ramekins.
  • 1. Place foil-covered ramekins on the trivet, stacking if needed, and lock the lid. 2. Select high pressure following the manufacturer's instructions and set the timer for 8 minutes. 3. Allow 10 to 15 minutes for pressure to build.
  • Follow the manufacturer's instructions to release pressure naturally for approximately 5 minutes. Unlock and lift the lid. Check the custard; it should gently jiggle around the edges without being liquid, and it will firm up more as it cools. Allow it to cool to room temperature for 15 to 30 minutes, then refrigerate for 4 hours.
  • Sprinkle 1 teaspoon of sugar over each custard. Use a kitchen torch to caramelize the sugar for about 30 seconds. Serve right away.
