Instant Pot chicken adobo in tangy and sweet sauce, quickly broiled for extra flavor without the long wait to marinate.
Ingredients:
  • 0.5 cup distilled white vinegar
  • 0.25 cup soy sauce
  • 2 tablespoons minced garlic
  • 1 teaspoon black peppercorns, roughly cracked
  • 2 bay leaves
  • 1 large onion, sliced
  • 1.5 pounds bone-in, skin-on chicken thighs
  • 1 tablespoon chopped scallions
Instructions:
  • Combine vinegar, soy sauce, garlic, olive oil, brown sugar, and crushed peppercorns in a bowl, whisk until sugar is dissolved, then mix in bay leaves.
  • 1. Layer onion slices on the bottom of a multi-functional pressure cooker. Arrange chicken thighs on top of the onions and pour the vinegar mixture over them. Seal the lid securely.
  • Follow the manufacturer's instructions to set the Instant Pot to high pressure and set the timer for 10 minutes. Let it naturally come to pressure for 10 minutes.
  • Prepare the baking sheet by lining it with aluminum foil.
  • Follow the manufacturer's instructions to quickly release pressure for about 5 minutes. Unlock and remove the lid. Use tongs to place the chicken thighs on the baking sheet with the skin facing up. Turn on the Sauté function and cook until the sauce thickens, which takes about 3 to 5 minutes.
  • Position the oven rack 6 inches from the heat source and preheat the broiler to high.
  • Place the chicken under the broiler until the skin is crispy, for about 6 to 8 minutes. Transfer it to a serving plate, spoon over the sauce, and garnish with scallions.
