Effortlessly prepare tasty Instant Pot vegetable soup using frozen veggies in no time.
Ingredients:
  • 6 cups chicken broth
  • 3 cups frozen O'Brien hash brown potatoes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (12 ounce) package frozen mixed vegetables (corn, peas, carrots, green beans, and lima beans)
  • 1 celery rib, sliced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon freeze-dried dill
  • 0.25 teaspoon ground black pepper
Instructions:
  • Combine chicken broth, hash brown potatoes, tomatoes, frozen vegetables, celery, Worcestershire sauce, paprika, oregano, onion powder, salt, dill, and pepper in a multi-functional pressure cooker like an Instant Pot. Mix well.
  • Securely seal the lid and set the pressure to high according to the manufacturer's instructions. Set the timer for 0 minutes and wait for 30 minutes for the pressure to build.
  • Carefully quick-release the pressure following the manufacturer's instructions for about 5 minutes, then serve the soup in bowls.
