Make mouthwatering Korean beef short ribs in your Instant Pot for tender, fall-off-the-bone perfection!
Ingredients:
  • 3 pounds beef short ribs
  • 1 Asian pear - peeled, cored, and coarsely chopped
  • 1 small onion, chopped
  • 4 cloves garlic, chopped
  • 0.5 tablespoon peeled and coarsely chopped fresh ginger
  • 1 cup low-sodium soy sauce, divided
  • 0.25 cup rice wine
  • 0.25 cup water
  • 0.25 cup brown sugar
  • 2 tablespoons sesame oil, divided
  • 0.5 teaspoon ground black pepper
  • 2 carrots, peeled and cut in chunks
  • 5 radishes, peeled and cut into chunks
  • 0.25 cup white sugar
  • 0.5 bunch green onions, chopped, or to taste
  • 1 tablespoon sesame seeds, or to taste
Instructions:
  • Submerge the ribs in a generous amount of water in a large bowl for 1 hour.
  • In a blender or food processor, blend together Asian pear, onion, garlic, and ginger until smooth. Transfer the mixture to a mixing bowl and stir in 3/4 cup soy sauce, rice wine, water, brown sugar, 1 tablespoon sesame oil, and pepper to make a flavorful sauce. Set aside for later use.
  • Pat dry the ribs and remove any excess fat. Transfer the ribs to a multi-functional pressure cooker like an Instant Pot, along with carrots and radishes. Pour the Asian pear sauce over the ingredients. Seal the lid, select the Meat function, and set the timer for 35 minutes following the manufacturer's instructions. Wait for 10 to 15 minutes for the pressure to build up.
  • Follow the natural-release method as per manufacturer's instructions for 10 to 40 minutes. Once pressure is released, unlock and remove the lid. Transfer meat and vegetables to a plate and set aside.
  • Turn on the Sauté function on your Instant Pot and mix in white sugar, the remaining 1/4 cup of soy sauce, and the remaining 1 tablespoon of sesame oil. Cook for about 10 minutes, stirring occasionally, until the sugar melts and the sauce thickens. Add back the ribs and vegetables to the pot, and stir to coat them with the sauce.
  • Sprinkle green onions and sesame seeds over the ribs and vegetables for a flavorful finishing touch.
