Instant Pot Garlic Roasted Melting Potatoes

Make Instant Pot garlic-infused melting potatoes for a quick, creamy, and crispy side dish.
Ingredients:
  • 0.5 cup butter
  • 1 pound Yukon Gold potatoes, peeled and cut into 1/2-inch slices
  • 0.75 cup chicken broth
  • 1 teaspoon ground thyme
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cloves garlic, peeled and lightly crushed
Instructions:
  • Preheat your multi-functional pressure cooker (like Instant Pot) on the Sauté setting. Melt butter, then add potato rounds in a single layer. Cook in butter until golden for about 5 minutes, flip, and cook for an additional 5 minutes. Set aside cooked potatoes.
  • 1. Put the trivet in the pot, pour in chicken broth, and season with thyme, salt, and pepper. Add garlic and cook for 1 minute. Place potatoes on the trivet, close, and lock the lid. Choose high pressure based on the manufacturer's instructions and set the timer for 1 minute.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then take out the potatoes from the pot.
  • Using the Sauté function, simmer chicken broth and butter until slightly reduced for about 2 minutes. Add potatoes back into the pot in a single layer and fry until golden on each side for about 3 minutes per side.
