Effortlessly create homemade General Tso's chicken in your Instant Pot for a delicious and quick alternative to takeout.
Ingredients:
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon dark brown sugar
  • 1 tablespoon tomato paste
  • 2 teaspoons sesame oil
  • 1 teaspoon red pepper flakes
  • 1 egg, beaten
  • 0.5 cup cornstarch
  • 1 (16 ounce) package chicken breast tenderloins, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds
  • 1 clove garlic, minced
  • 0.5 teaspoon ginger paste
  • 0.25 cup chicken broth
Instructions:
  • Prepare the flavorful sauce by whisking together soy sauce, rice vinegar, honey, brown sugar, tomato paste, sesame oil, and pepper flakes in a bowl. Set aside.
  • Prepare the chicken: Start by cracking an egg into one shallow bowl, and placing cornstarch into another bowl. Dip chicken pieces in the egg, coat them in cornstarch, and then place them on a plate.
  • Preheat a multi-functional pressure cooker (such as Instant Pot) on the Sauté function. Heat olive oil for 1 minute, then sear chicken on both sides until crisp, about 2 minutes per side. Transfer to a plate.
  • Combine sesame seeds, garlic, and ginger paste in the pot. Whisk in chicken broth and the reserved sauce until blended; cook for 2 minutes. Press Cancel. Add chicken to the pot and stir well to coat.
  • Seal the lid securely, set to high pressure following the manufacturer's guidelines, and program the timer for 5 minutes. Give it 10 minutes for pressure to build.
  • Quickly release the pressure following the manufacturer's directions for about 5 minutes. Give the chicken a good stir.
  • Continue using the Sauté function until the sauce thickens, which should take around 3 minutes.
